This is my crunchy, sweet, salty, and funky fave salad. I suspect you are thinking it is a bit weird, but it happens to be a client favorite. It was created from one of my burrito snack recipes – avocado, kraut, and hemp seeds wrapped up in a leftover burrito skin. YUM!
This recipe doesn’t have specific portions because honestly you just toss whatever your heart fancies into your bowl and enjoy.
SOPHISTICATED – worth it
- gem lettuce or any lettuce will do (Jerome’s Carmel Valley Market)
- borscht kraut (Wise Goat Organics)
- golden kraut (Wise Goat Organics)
- purple sweet potato
- avocado
- sprouts (Power Botanicals)
- extra-virgin olive oil
- Meyers lemon, freshly squeezed
- hemp seeds
- salt + freshly-ground pepper
- edible flowers, such as nasturtiums
BASIC – yet delicious
- lettuce
